Good Monday Morning to everyone:

Here's yet another recipe:

Christmas Cake Cookies

2 lb. dates
½ lb. candied cherries
½ lb. candied pineapple
½ lb. shelled almonds
½ lb. shelled Brazil nuts
2½ cups sifted all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 c. butter
1½ c. sugar
2 eggs

Cut dates into chunks, quarter cherries, slice pineapple thinly, blanch almonds & chop & toast, chop Brazil nuts.
Sift flour, baking soda, salt & cinnamon.
Start oven at 400*
Work butter until creamy.
Add sugar gradually, continue creaming.
Beat in the eggs thoroughly; add in the flour mixture, then the fruit & nuts.
Drop batter by the tsp. onto ungreased sheets.
Bake 10 minutes (watch)…they’ll just need to get a light toasty-brown
Makes 150-170 cookies.

I think a friend gave it to her. Lots of chopping but worth it!”


I can't wait to try that one since I'm a Christmas cake fanatic. I bet they're good!
