Peanut Brittle (or Peanut Brittle Wreaths for a gift!)

1½ cups sugar
1-cup corn syrup
½ cup water
½ tsp Salt

2 tbsp butter or margarine
1 tsp baking soda
2 or 3 cups of peanuts (or mixed nuts if you prefer)

Combine sugar, corn syrup, water and salt in heavy medium saucepan.
Heat and stir on medium heat until sugar is dissolved and mixture starts to boil.
Boil, stirring occasionally, for about 15 minutes until hard-crack stage on
candy thermometer (300° - 310° F) or until a small amount dropped into ice cold water separates into hard, brittle threads.
Remove from heat.
Add peanuts and stir, then quickly add soda and mix well (quickly or it will harden).
Immediately pour onto a large well-buttered baking sheet.
Cool completely on baking sheet, then break brittle into pieces and store in airtight container.


Bridgette says: “I make this at Christmas for my mother-in-law-- she just loves it! My mom taught me how to make it! We used to make all kinds of candy including sponge toffee. Yum!!! We often made the peanut brittle into wreaths packaged in pizza boxes for the Church bazaar!
