Good morning Everyone:

Here it is Friday and already we've had four recipes posted. (I missed Tuesday due to being out of town!)

Email YOUR favourite Christmas recipe to me at pclark@reporters.net and it will get posted in the next little while. Once all the recipes have been received, you can email me for a copy of the document with all the recipes together. Enjoy!

Here's today's recipe:

Mushroom Turnovers

(Edith Partlo)

Pastry

6 oz softened cream cheese
1/2 cup butter or margarine
1 1/2 cup sifted flour

Filling

1/2 pound minced mushrooms*
1 large onion
1 tsp salt
1/4 tsp thyme
2 tablespoons flour
1/4 cup sour cream
1 egg, beaten

Beat the cream cheese and butter, blend in flour till smooth. Chill 1 hour. Set oven to 450F.

Cook mushrooms and onions in 3 tablespoons butter until tender. Stir in salt, thyme, flour and sour cream.

Roll out dough thinly and cut into 2 3/4 inch circles. Place a teaspoon of filling on half of circle. Brush edges with beaten egg.* Fold over and seal. Prick the top in three places.. Place on ungreased cookie sheet and brush with beaten egg.

Bake 12-15 minutes or until golden.

Makes about 50.. ( I have never gotten 50 out of this recipe)

*Be sure to hand chop the mushrooms, otherwise they will be too mushy if you use a food processor.

Also be sure that you wet the edges well or the filling will ooze out while cooking..

Edith says: "I make these every Christmas and they are gone in no time."

Have a great day everyone! And remember, I still need a recipe for Monday.

Pollie
